It’s fall!  And that means apple orchards are entering their peak season, with apples ripe on trees, gallons of apple cider galore, and sweet-smelling apple baked goods all around!  If you haven’t made your yearly trip to the apple orchard yet, it’s likely you will be soon.

And more power to you!  Apples are a wonderful staple fruit, packed full nutrients like such as:

So what to do with your abundance of apples?  While apple pies, crisps, and turnovers are nice (really, feel free to bring some by sometime), here’s an amazing heart-healthy apple muffin recipe that’s the perfect mix of sweet and satisfying.  It can double as dessert, or be served as breakfast as your kids are running out the door.  With hardly any fat, and lots of whole grains and fiber, this recipe featured on the Food Network is light, but packed full of flavor (and some brown sugar too).

Ingredients

  • Cooking spray
  • 1/4 cup chopped pecans
  • 3/4 cup plus 2 tablespoons packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1 cup all-purpose flour
  • 1 cup whole wheat pastry flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon fine salt
  • 1/4 cup canola oil
  • 2 large eggs
  • 1 cup natural applesauce
  • 1 teaspoon vanilla extract
  • 3/4 cup low fat buttermilk
  • 1 Golden Delicious (or your choice of) apple, peeled, cored and cut into 1/4-inch pieces
